Review: Roasted Potatoes, Apples and Sausages with Maple Mustard Glaze

We spotted this tasty one-pan recipe earlier in the week on healthyseasonalrecipes.com and have been looking forward to adapting it to be vegan.

Roasted Potatoes, Apples and Soy Sausages with Maple Mustard Glaze

It was simple to adapt the recipe, just by using soy sausages. But, baking time were adjusted (roast for ca 20 minutes, final bake 35 – 40 minutes). Traditionally, German recipes often combine potatoes with apples. It makes  a lovely combination.

Cheesy Garlic Pull Apart Bread – Rhodes Guest Post


It's my turn to to Guest Post over at Rhodes Bake-N-Serve Blog.  I've been seeing a lot of these pull apart breads online.  Most of them are sweet cinnamon breads.  I decided to try my hand at a savory pull apart bread.  I decided on a Cheesy Garlic Pull Apart Bread.  I picked up a packet of the new Hidden Valley Italian dressing mix and used it for the seasoning in this garlic bread.  It was really good.  I hope you enjoy it as much as we did!

Beet salad and crispy fried goat’s milk cream cheese with rhubarb-green fir "honey" vinaigrette

Even if I wanted, I couldn't deny that this plate was inspired by René Redzepi. Once more I got back to my favourite combination: beetroot and goat's milk cream cheese. Finally, I managed to get some spring beets that are completly edible. The beet is both raw and cooked on the plate and even the cooked stalks of the leaves are used as part of the vinaigrette. The green fir honey goes well with both of the main ingerdients and some henbit deadnettle leaves completes the dish. Ah, and creamy goat's milk cream cheese is hiding behind the crispy coat and surpises you when you take the first bite.



Ingredients:
80 g goat's milk cream cheese
a few herbs (e.g. rosemary, chervil, chives)
1 egg
about 3 tablespoons flour
about 10 tablespoons breadcrumbs (may be mixed with oat flakes or ground almond)
salt, pepper
oil for deep frying
4 small beets
1 stalk rhubarb
1 shallot
1 tablespoon green ...

Mexican Torta with Refried Black Beans and Roasted Poblano Pepper – Video Recipe

Tortas are Mexican sandwiches. They generally have a base of refried beans, which can be topped with just about anything. In the video I’ll show you a version with avocado and a moderately picante roasted poblano pepper, with a simple cabbage slaw for some added crunch. In my cookbook I’ve got a breakfast variation with scrambled eggs that is a messy, delicious good time!

The avocado I use in the video is a very special Reed variety that I get in season from ChefShop.com. They are huge and buttery with a tiny little pit. (Of course a regular Hass will do if you don’t have the Reed.)

Buffalo Turkey Burgers with Blue Cheese Broccoli Slaw


Turkey burgers with a cayenne pepper kick! Here's a fun way to turn boring turkey burgers into something with a little more exciting. If you're a buffalo wing fan, you'll love the flavors in this turkey burger topped with a broccoli slaw tossed with my very own homemade blue cheese dressing.


Someone recently emailed me and gave me this idea, she took my zucchini turkey burger recipe and dipped it in hot sauce after. I decided to add it to the turkey meat instead, and figured you can always serve more on the side if you wish!

And by the way, there's carrots in these burgers but I promise, you can't even tell. It's a great way to add more fiber and vegetables into your diet whether it's for yourself or your family.


I'm a bit of a wimp when it comes to spicy food, so Frank's hot sauce is perfect for my taste, but if you really like it ...

Beach Day Macaroni Salad (Mayo-Free)

Is it beach weather where you live yet (or I guess depending on where you live I should ask pool, lake or picnic weather)? Is our weather finally on the same page across the country?

My family and I started hitting the beach on the weekends early last month. I don’t necessarily wait till the weather warms up to enjoy the beach, I LOVE the beach pretty much all times of the year , every season (fall and early spring might be my favorite), any time of day (early mornings and late afternoons are the most peaceful for me), every weather condition (where I come from we flock to the beach when a hurricane is brewing). I spent most of my life just 10 minutes from the ocean (and was lucky to work at my parents restaurant that was just a few feet from it) and can honestly say that I am my calmest and happiest self near the water. ...

Best Ever Sloppy Joes


Okay here we go folks. This is without a doubt the best recipe I have for Sloppy Joes which comes from my mom. Even better than the Slow Cooker Sloppy Joes, which are convenient but I will admit, these just taste better. I love to add a slice of American cheese to my sandwich or if that doesn't strike your fancy, a tiny spoonful of of sour cream. For the purists, it is delicious just on its own. Fish Pie

Is there anyone that doesn’t like them?

The mere sighting of this word on a menu can bring instant ”comfort” to an individual’s ear.

Where would ”bangers” be without their mash? (a bit like Cagney without Lacey!).

You wouldn’t dream of serving up a hearty meatloaf and NOT enjoying it with a side of mashed potatoes.

Today though, I wanted to veer off the traditional path and showcase some alternatives.

Don’t get me wrong. I like my regular mash but it’s nice to know there are other veggies out there that can compete with the humble spud.

I touched on this briefly a few years ago when I made a carrot and dill mash.

Pastel Azteca (or Aztec Pie) {she made, ella hace}

So.  Last month when my friend Leslie and I were tossing around what we should make for she made, ella hace this month, she suggested Pastel Azteca.  Huh?  I had never heard of it before.  But if you know me at all, you know that alone was enough to make me say YES!  I love making new-to-me dishes and trying new foods.  Plus, Leslie said it was a favorite meal of her family's.  And since one of the reasons I wanted to team up with Leslie every month was because we had such similar taste in food, I was pretty sure it would become a favorite around here, as well.  So, it was on.  Pastel Azteca in the very near future.

Greek Salad with Creamy Dressing

Salad season is officially here.  It's time to get into shorts, t-shirts and those dreaded swim suits so eating lighter and healthier is almost a necessity.  I made this simple Greek Salad to go with some grilled chicken and it was a perfect light meal.   The creamy and tangy Greek Dressing coated each piece of salad deliciously.  I may be trying to eat healthier because I'm vain, but it doesn't feel like a sacrifice with this hearty salad. 

Ingredients:
2 heads of romaine lettuce
1 cup of diced tomatoes or cherry tomatoes quartered
1/2 red onion
1/2 cup Greek olives (black, green and/or kalamata)
1 cucumber sliced
1/2 cup of feta cheese crumbled

 

 Creamy Greek Style Dressing
1/4 cup Extra Virgin Olive Oil
1/4 cup  Fresh lemon juice
1-2 cloves of grated garlic
1 Tbs of honey
2 Tbs of mayonnaise
1-2 tsp of red wine vinegar
salt and black pepper to taste
